I might pick this up.  It seems so elementary to drink water before every meal to reduce the amount of calories you might ingest.  I think that alone would make a huge difference in my eating habits.  I tend to be a bit of a compulsive eater.  I Stuff myself often and eat when I’m not hungry.  So the water trick along with maybe a prayer of grace before I ate and eating mindfully would do wonders for me.  Thing is, when the food is in my sight I don’t think.  I just attack!

Dream Geek, here.  My partner in crime, Chantal, has been carrying Dos Veganos for a little over a month now.  Bless her for not making me feel any worse than I did that I wasn’t contributing!  I was so swamped with family and car issues.  And for the last two weeks I’ve been sick with some weird mutant virus!  Today is the first day I actually feel humanoid!

So I was excited to be feeling better and have my appetite back that I made whole grain Vegan Blueberry Banana Waffles!  I used Very Vanilla Silk Milk instead of milk, honey for sweetener, and mashed banana for  a binder.  Yummy!  It was the perfect meal to greet me back to the land of the living!  And my picky niece even wanted to have one made for her after she tasted the batter (which tasted like cake batter).

Vegan Stuffed Peppers February 1, 2012

Just went to Whole Foods last night and swung by the buffet hoping for a good vegan dish.  Scooped up a vegan stuffed pepper thinking they looked pretty good.  Holy crap!  I can’t tell you how much flavor was in every bite!  Maybe I was just really hungry but that was the BEST stuffed pepper I ever had!  As far as I can tell it was stuffed with wild brown rice, tofu, black eyed peas, onions, parsley and possibly some other leafy green vegetable I’m not too sure what.  Looks like I have a new recipe to try!

So for all those who crave some of that “sugar poppin”, “carb overload”, processed snack food there ARE a quite a few foods that we can still indulge in on a plant-based diet.  Some of my faves are Double Stuff Oreos, Nutter Butters, Walmart brand chocolate chip cookies, Vortmans Lemon Wafers…

Sweet Potato Stew with Swiss Chard December 27, 2011

Last week I attended the monthly potluck at the Northern Connecticut Vegetarian Society and was amazed as usual at the variety of delicious foods! Perfect for sampling and figuring out what I love and what I want to avoid on my cooking adventures. Well, my favorite dish was the  Sweet Potato Stew with Swiss Chard. OMG! If I could have eaten only that all night!

Well, here’s the recipe:

SWEET POTATO STEW WITH CHARD
Ingredients
2 Tablespoons Olive Oil
2 Cups Yellow Onion, Diced
1 Large Sweet Potato
4 Cloves Garlic, Chopped
1 Jalapeno Pepper, Minced With Seeds
1 Tablespoon Fresh Ginger
1 Teaspoon Ground Coriander
½ Teaspoon Turmeric
1 Can (14 ounces) Coconut Milk
2 Cups Water
1 Bunch of Swiss Chard
¼ Cup Cilantro
Squeeze of Lime for Garnish
Salt
Serve with Quinoa or Jasmine Rice
Directions
1. Warm the oil over medium heat in a large sauce pan; add the onion and a bit of
salt.
2. Add sweet potato, garlic, pepper, ginger, spices and sauté for a minute or two.
3. Add 2 cups of water, coconut milk and a bit of salt; bring to a boil and reduce to
a simmer for about 15 minutes, covered.
4. Add the chard and continue cooking for about 8‐10 minutes until the chard is
tender.
5. Thin with water if necessary; serve over quinoa or jasmine rice.
* for a healthier low‐fat version, do not add the olive oil and choose reduced‐fat
coconut milk
**The above stew features Swiss chard. While Swiss chard looks similar to kale,
Swiss chard has a more delicate flavor. Its long list of nutrients includes Vitamins A,
C, E, and K, Potassium, Iron, and Fiber.

Drug of Choice? Vegan Fried “Cheese”. December 19, 2011

Fried Daiya "cheese"

There’s this local family owned restaurant in Manchester, CT that is famous for its fried cheese.  Shady Glenn’s.  Basically it’s a non-chain Friendly’s with a few extras; homemade ice cream, 50s style white paper hats (a la the old soda shops), and an awe inspiring mural of demented gnomes make this place a multigenerational family favorite.  And then, of course, there’s the fried cheese.

Before going vegan I would try to mimic the method of frying cheese to no avail.  It was always a goopy mess with no form or crisp.  Well, the other day when I was making a grilled cheese with Daiya Cheese I noticed the cheese was crisping up quite nicely  when it drooled out from between the bread and onto the pan.  As Oprah would say, I got an Aha moment!  I quickly added some vegan butter to the pan and plopped a handful of Daiya shreds to the heat and excitedly flipped it over and over for a few minutes.  What came of the experiment was perfect in form, consistency, and crispiness.  Absolutely delicious vegan fried cheese.  Add a slice to a veggie burger and recreate the famous cheese burgers at Shady Glenn’s.  This is one of those simple recipes that you can pass on to your carnivorous friends cuz it’s so fatty and salty and crispy.

So…not necessarily healthy but so freaking good!  It sure helps when you’re in a junk food mood or craving that unmistakable jolt of pleasure that you used to get from your cheese days.
